Animal-Based Breakfast Smash Burger

This animal-based breakfast smash burger starts with banana-egg-ghee waffles and is topped with a salted smash burger, raw cheese, eggs, and maple syrup.

    Note: since the waffles are flour-free, they are flimsy, so this meal is not intended to be eaten like a classic burger, but rather an open-faced plated burger.

      Make the waffles.

      • Melt 2 tbsp of ghee (or butter) to liquid.
      • In your blender, add the banana, 3 eggs, and melted ghee. Blend until smooth.
      • Turn on your waffle maker. Once it's ready, use the batter to make waffles.
      • Note: the Instagram reel for this recipe shows just one waffle, but this recipe should make 2-3 waffles depending on how large the banana you use is.
      • Once the waffles are done, carefully remove them from the waffle maker.
      • Note: Since there is no flour, the waffles will not be rigid and formed like waffles that are made with flour. I had to remove mine carefully with a fork to prevent them from breaking. See the Instagram reel for a visual.
      • Set the waffles aside on a plate once done.

      Make the smash burgers and shred the raw cheese.

      • Using your vegetable grater, shred the raw cheese and set aside.
      • Place 1 tbsp of ghee in your cast iron pan (or whatever pan you're using for cooking) and bring to medium heat.
      • Form the ground beef into a ball.
      • *Note: instead of ground beef, I used White Oak Pastures steakburger grind. If you've never tried it, I highly recommend it. If you use it, it doesn't char quite as well as ground beef, so keep that in mind.
      • Note: for an added breakfast vibe, add rosemary, thyme, and/or sage (if you do spices) to the smash burger patty to give it some sasuage feels.
      • Once the pan is hot, place the beef ball in the pan, then use your smasher to smash the ball into a very thin patty.
      • Remove the smasher, salt the side facing up to taste, then place the smasher back on top of the patty.

      • Leave for 1-2 minutes, then flip the patty, salt the other side to taste, then place the smasher on top.
      • Cook for another minute or so, then remove the smasher and cook the patty until it's as brown/charred as you prefer, usually for 2-3 more minutes.
      • Once done, place the cooked patty on top of the waffles, and while still warm, top with your shredded raw cheese (so it melts some).

      Make the overeasy eggs (or however you prefer eggs).

      • In the same pan (or a different one if you don't like mixing), add 1/2-1 tbsp of ghee, and make your eggs (2) whatever style you prefer. I chose overeasy. Sunny side up and scrambled would be good too.
      • Once done, place the cooked eggs on top of the raw cheese.

      Top with maple syrup and serve.

      • Top the smash burger with maple syrup, then enjoy immediately.
      • This dish is best served fresh, although it will last in the fridge for a day or so.
